Produced in DO Penedès, this Cabernet Sauvignon is made from certified organic estate vineyards located in Costers de Muntanyans.
Meticulously selected in the vineyard, the grapes were transported to the cellar, destemmed and cold-soaked. The alcoholic fermentation of this organic red wine was carried out in stainless steel tanks, while malolactic fermentation took place in French and American oak barrels.
Once both fermentations were completed, the wine was aged for 14 months in those same barrels. Then the wine Pinord Chateldon Reserva was lightly filtered prior to its bottling and aged for a further 24 months in the facilities of the Pinord winery.
Tasting Notes:
Medium purple with a garnet hue at the rim. Quite complex on the nose, this varietal Cabernet Sauvignon is reminiscent of ripe, almost jammy red berries, along with green bell peppers, roasted red peppers, a variety of spices such as clove, cinnamon, Jamaican pepper and vanilla, and some toasted and smoky notes. On the palate, flavours of red fruit, with mineral hints, a spicy touch and a hint of bell pepper. Juicy tannins, crisp acidity and a long, toasted finish with some fruity overtones.
Food Pairing:
A wine at it's best accompanying good red meat dishes, sirloin steaks, stews and even roasted lamb
